The tannin and acid structure are medium, and colour is lighter than for other reds. The flavour profile includes red fruits like strawberry, raspberry, cherries and Turkish delight. There is an element of herb like organum and cinnamon. The talc-like tannin texture will soften over time. Primary red fruit and spice will become more savoury and gamey as the wine matures. Maturation should peak in 8 to 10 years. Serve at 140 to 160 Celsius. Classically inspired Spanish fare like fish paella; barbequed vegetables with cumin, soya and Asian 5spice; thick cuts of tuna steaks barbequed and Chinese food.

Layered and textured truffle savouriness and earthy forest floor interwoven with concentrated black cherry compote harmoniously supported by mineral textured tannins. Although the wine is approachable at its primary stage with fresh cherry and red berry components evident at youth, the wine will age for at least 10 years where primary components will evolve to tertiary forest floor, truffle, earthy and savoury notes that are typical in great Burgundy examples.

Made from Shiraz grapes grown on Koffieklip – rich soils, this wine shows fresh black cherry, plum and chocolate complimented by cedar spice. The palate is soft and juicy with a long velvety finish. Spicy notes of black pepper, cinnamon and cloves are layered atop black cherry and chocolate. The palate shows fresh plum and violets, and finishes with a well-rounded velvety tannin.

Made in a classical style, this Cabernet Sauvignon has the potential for decades of ageing. Dark colour, cloves and lead pencil nose, tannin still tight at this stage, should start to open a year or so after bottling. A great companion for lamb shank or oxtail. Our Pinotage is a full-bodied wine with a deep purple colour. The nose is reminiscent of plums, which is typical of this unique South African variety, while the palate is rich and full with a long finish. Overall, the wine is soft, juicy and approachable.
